Recipe: Nut Butter Oatmeal Protein Cookies


Gluten-free and no-bake. I stole this from somewhere. I’m not a food photographer, either.

Ingredients

  • 1 cup oats
  • 1/2 cup chia seeds
  • 1/3 cup sunflower seeds
  • 1/4 cup honey
  • 1/2 cup nut butter (peanut. cashew, almond, etc., preferably no sugar added)
  • 1/4 cup coconut oil
  • 1/3 cup protein powder (chocolate or vanilla)
  • 1/3 cup chocolate chips (optional)

Directions

  1. Microwave the coconut oil for 40-60 seconds.
  2. Combine all ingredients and mix evenly. I use one of those large rubbery spatulas and my arm. It works well.
  3. Melon ballers work pretty well with scooping them, but you can be weird and use your hands as well. I usually place them on a baking sheet with wax or parchment paper on top, but a plate could also work.
  4. Stick them in the freezer or refrigerator for a bit, and you’re done.
