Recipe: Keto-Paleo Coconut Shrimp

Note: this is for those of us with an air fryer, obviously.

Ingredients

1/2 lb tail-on large shrimp
1 egg, beaten
1/2 cup shredded coconut
1 tsp garlic powder
1/2 tsp paprika
1/4 tsp onion powder
1/4 tsp salt

Directions

1. I used thawed and towel-dried shrimp for this, since it’s easier to coat and cooks better in my air fryer.
2. Preheat the air fryer to 350 degrees.
3. Combine the coconut and spices in one bowl, and the whisked/forked egg in another.
4. Standard breading technique: dip the shrimp in the egg, then whip and drag it around in the coconut and spice mixture.
5. Stray the rack(s) in the air fryer with cooking spray, place shrimp inside, and cook each batch at 350 degrees for 8-10 minutes.

Let me tell how heinous the site was that I had to visit to use and steal this recipe. The page loaded fine, as far as “fine” goes for recipe sites, but my phone, where I usually call up recipes, was a different story. The element positioning was so janky that an advertisement loaded over the directions, so I had to reload the page and scroll all the way down (remember, all these sites have chapter-length stories before the actual recipe) really quickly, before the ad loaded, to read the next step. I did it, though; if perseverance builds character, this made me into a Shakespeare protagonist.
